Meeting over Spicy Tuna Pesto and Turbo Chicken

I invited everyone in the core group of the ministry I am part of – Singles@Work to have the continuation of our planning and meeting at my place over dinner.

I prepared two main dishes which are two of my favorites. I prepared a turbo whole chicken marinated in salt, pepper, calamansi, oregano, some seasoning and lemon grass. I let it soak for more than 2 hours.  (I forgot to take a picture when it got cooked. )

I also prepared my specialty – spicy tuna pesto pasta. I usually buy a ready to mix pesto sauce but unfortunately the supermarket near my place ran out of it so I have to do the sauce from scratch, for the first time. I used my Magic Bullet blender to make the sauce. I mixed the fresh basil leaves (which I sooo love the smell!) with olive oil first, then, added chopped garlic and little bit of salt and pepper.

Then, I sauteed the tuna with onions. I mix Century Tuna Spicy and the one in Vegetable oil. After which, I added the pesto sauce I have made. I put in the pasta then added the nuts as last. I don’t like mixing the nuts when I do the sauce.

Food for the Body & Soul

 

Since I resigned from work, I had more time preparing meals especially breakfast!

One breakfast, I cooked for me and my roomie some buttered carrots, omelette and our favorite chorizo made in Cebu. It’s just nice to have normal meals on weekdays.

I craved also for some sweets this week that I bought donuts and a box of chocolate-filled pretzel sticks.

I realized how dependent we are with food that sometimes we feel like we are about to die if we can’t eat a proper meal on time.

I’m glad that Jesus taught us about prayer and fasting. Not just that it reminds me that I don’t live by bread alone, but it’s an amazing journey with the Lord as He enables me to just be dependent and focused on Him alone. It is a time of prayer and studying of the Bible instead of eating meals. It could be a one meal fast or three meals fast and it could be three days or a week. Aside from meals, there’s also a fast from the things that usually take away our time for God like watching television and/or the internet (Facebook, etc.)

If you haven’t tried prayer and fasting, I really recommend you give it a try.  You will experience God much deeper.

Chicken & Cupcake

Since I bought my  American Home Turbo Convection, I was able to prepare more healthy meals. Oil-free meals!

Growing up, my family always loved turbo chicken. And I’m so happy that I can prepare it whenever I want! Because I craved for it last week, I did some turbo for the thigh parts and some broccoli for the side. I marinated the chicken with just salt and pepper and cooked with turbo for 45 mins to an hour if you want it really crisp.  As for the broccoli, I just steamed it then, sauteed with butter after.

If you want to do it for a whole chicken, would be best to marinate it for a long time. Then, put lemon grass and we have this fruit we call in Ilonggo “Batuan” which really adds to the taste of the chicken. But, lemon grass is okay. Put both in the inside part of the chicken and marinade inside as well with salt and pepper and some “calamansi” or lemon.

This is the “I’m not proud part” of what I prepared. I wanted to bake banana muffin and I don’t know – I put in the wrong type of sugar to my mix. And so, the muffin was just the worst ever!! And I’ve made this before already, I just don’t know what I was thinking!! Grrrr….

I will definitely, definitely, definitely do it again perfectly!
